I will start with no pictures, but it did happen.
2 sets of ribs, both about the same weight. No foil. One rack was sauced and finished at 5 hours, the other was about 6.5, almost 7 hours. Grate was at 215.
Should I cook them hotter?

Yes, 250 275 cook until 90 degree bend test.

So finally got back to this. Stabilized at 245 grate and went 5 hours. No foil. About 4 hours in did the bend test. They were not ready. At 4.5 hours still not perfect but said they must be done. Slab was 3.3lbs. Still not happy. Seemed dry. No finished pics.
