Thermoworks smoke house penetration probe and gasket seal

I am debating a Thermoworks package before my next brisket but I hear that the standard meat probe (smoke house penetration probe) has a thick cord and might cause issues with the seal on the gasket. Is this a valid concern? Is there a way to avoid the problem?

no concern - the gasket will seal well enough around the probe wire.Re-gasketing the USA one yard at a time

If you get the heavy duty probe (which is quite thick) it will keep the dome open a tiny amount. Easy enough to adjust the vent door and your daisy wheel to compensate for the small gap. It may also depend on your gasket, I just replaced mine with the BGE gasket and it does leave a small gap.Edina, MN
