I did a 12 pound pork butt overnight and slept like a baby. The Pitmaster 110 kept the XL at 275 grid temp without a problem. What amazes me is that this 12 pound butt took over 10 hours to get "probe tender".
The other two items in the picture I also could not do without:
1. The Maverick ET732 monitors meat temp for me without requiring me to go outside to check it. Love it!
2. The Thermapen is great for quick checks during grilling. Helps me get individual pieces to the right temp.
If you have doubts about getting a temp controller for your egg, I suggest you get one now! The peace of mind with long cooks is well worth the money.
