Evidently my wife does listen cause for my birthday she got me a 14"pan, Spanish Saffron, Spanish Paprika and Paella Rice. Now hopefully the weather is decent this weekend.

@Mattman3969-great gift package. While waiting for @L_S to reply here's a link that is full of eggcellent paella info. http://www.nakedwhiz.com/paella/paella.htm I fairly closely follow his suggestions on the fire and it works quite well with the LBGE. And as you know, make sure everything is ready to go before you start the cook as it is labor intensive but so worth it! Enjoy-Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.

@L_S - My time in the boy scouts taught me to always be prepared so I always have a full bag of paella rice in the pantry even though I can buy them down the street.
@Mattman3969 - you can't go wrong with the Whiz's recipe.

José Andres cooks tomato, garlic, and chipotle peppers into salsa salmorra, and uses that instead of the standard sofrito. I think it makes a better, easier paella.Minimax and a wood-fired oven.

I like hot so I generally throw in an Italian cherry pepper in the sofrito as well. Most important thing is the sausage. Flavour profile of Mexican chorizo isn't right.
