Sunday brisket and an oven project too.

I started a brisket this morning running at about 335. Plan to foil at 160* IT to finish it off. Will be snacked on before but primarily used in chili for a chili cookoff. I also made my first pepperoni from the sausagemaker.com kit. Thought I would do the first one in the oven to get a feel for the flavor and make adjustments before I attempt the first one at extremely low hot smoking temps on the Egg.

Brisky update?

XL, Mini Max, and a 22" Blackstone in Cincinnati, Ohio -
Wrapped in foil at 160 IT. At 172* now. Plugging along. I love that smell upwind.

Looking good! I'm thinking of using some of my leftover brisky for chili as well.Which came first the chicken or the egg? I egged the chicken and then I ate his leg.

Brisket hit 201 and is buttery. FTC for a bit and wait for final results.
Pepperoni is half way through it's 12 hour journey. Kitchen smells good.

Brisket was good. It was a little smokey but by design. I like to give it a little extra smoke when it is going in chili as the sauce tends to knock it down a little.
Meanwhile, pepperoni is about to come out and begin its cool down process.

It looked good in the fridge this morning but it didn't sound good for breakfast. I will be testing it tonight. I will keep you posted.

Disappointed in the pepperoni. It has decent flavor at best and consistency of summer sausage more than pepperoni. I will use what seasoning I have left that came in kit and try to spice it up on my own but will definitely be following recipe from Charcuterie from here on out. And will be smoking in the Egg and not low temp oven either. Still much to be desired after first shot.
