Bacon Butter Beans

I've never had Butter beans before in my life and I was Curious if I could make them to my liking. I used a lot of fresh garlic, shallots, and fresh sage and sautéed it up in EVOO. Threw in large slices of bacon and made every thing translucent. Topped off with a can of stewed tomatoes, 3 cans of chicken broth, and 4 cans of butter beans. Tossed in a jalapeño and some fresh oregano and put in the egg indirect at 275 for about 4 hours in my CU Dutch oven. Came out pretty damn good. Sorry I don't have a pic of the cooking process but McCallan 18 got involved.

    Wow! The only butter beans I ever eat come out of a can and into a saucepan to heat and eat. Add a little black pepper. Been eating them that way my whole life. Never would have dreamed of all (or ANY) of those ingredients! Sounds good though.

    I hate it when I go to the kitchen for food and all I find are ingredients!

    Butter Beans is what cooking a bone in ham is all about......
    Salado TX & 30A  FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd.

    Bone in the back of pic. Just saying in a four hour cook you could cook from dry beans ( not can). The tomatoes is new to me. Come on down to Salado EggFest in March and we will discuss it. image

    We plan on going to Salado if I'm not working in Gainesville Florida that weekend. The last time I went down I had a blast. And next time I'm using dry beans as well, this one was a trial run.

    Another two countries separated by a common language moment. Had to google butter beans. Still don't have a definitive answer. Some say they are lima beans, some say a different genus and some say they are dehydrated limas.

  • I've always referred to baby limas as "butterbeans". They are the small, green beans we picked from the garden and canned at home. My mother would boil the butterbeans with salt, pepper and some bacon for seasoning. We ate it as a side dish and usually had fried cornbread and a fresh vidalia onion to go with it.

    What we call "lima beans" are the dried, white beans and  we cooked them with a ham hock or bone and some of the cut-up pieces of ham. Just typing this out is making me want to throw some in a crock pot....

    Either way, both are really good and easy to cook.

    That makes sense. Limas are green or white here. @tuttles look white to me.

    I remember my parents making Lima beans as a kid and couldn't stand them. I guess since they opened a Libby's can and dumped them in a pot. I might get brave and try a Lima bean recipe next.

    I grow and pressure can Lima beans and butter beans here in sweet home Alabama. After cooking/canning Lima beans turn a pale green color. Butter beans turn brown. There are several varieties of each. Also butter peas are really good.
