Yeah...i'm solo this weekend too so this all for me. I'm even smoking a brisket tomorrow. lolI guess I'm getting into BBQ mode cuase freaking excited for my Austin BBQ Tour next weekend!!!!

Look great @cazzy. Never cooked beef ribs. What is your method on them? I go 4-0-1 for pork and pull after bend test. Imagine that would be different on beef. What say you?Columbia, SC --- LBGE 2011 -- MINI BGE 2013

I don't wrap at all on pork ribs, but everything i've read about beef ribs...it's a much different cook.I started off at 250, then bumped it up to 300 after a hour of smoke. I'm thinking of wrapping in butcher paper for the last hour, but I may just let them ride it out. We will see what the color and firmness looks like at 6pm.Just a hack that makes some $hitty BBQ....

Okay-tried to follow the thread to the finish-line and may have missed. That said, if the general conversation is beef ribs- hell yes! Back or short ribs are eggcellent-and worth the buy and cook. Now WRT SRF that's a whole new level of $$.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

What's the itinerary for your Austin tour? When last TM list came out in 07, I hit the top 5 in one day. Snow's, Louie Mueller's, Kreuz, Smitty's and Luling City Market. 270 miles, 6 hours, $140 worth of barbecue.XL BGE; Schertz TX by way of Stow OH. #egghead4life
