SV Brisket?

Anyone have success cooking a brisket sous vide?

    I've thought about it when I get one. I have heard of ribs done this way and then cooked hot on the egg for finishing.

  • It is definitely the easy way to get it done.  I cook frozen steaks at 200f after searing them, this would be no different really, just kinda something I use to make fun of my brother for when he would boil his ribs before cooking them.  But I also make fun of him for using ketchup to make BBQ sauce, I'm just a ****.  My buddy is a chef in NYC and when I showed him my method for the steaks, he brought up the same point about sous vide.

    Is your point that SV is the equivalent to boiling ribs?  Really just trying to understand...    :-?
