smoked onion mashed potato

I was on vacation in Miami and went to a restaurant that served smoked onion mashed potatos. Everyone at the table loved it. I'd love to try and prepare some for my daughter's first birthday party. Does anyone have a recipe for this or something similar? I am smoking ribs for the occasion and I'd love to incorporate a smoked potato dish.

    That sounds tasty. I don't have a recipe but seems straight forward to make. I'm thinking -1/4 inch sliced white onion with peanut oil brushed on both sides, on oiled, raised grid. Smoke at 250 degrees dome untill onion is soft, clear and slightly toasted on the edges. Dice fine in food processor but not to the point of mush. Add to whipped potatoes with butter and a little half and half to smooth out. Salt and pepper to taste.
