Turkey necks

I want to make turkey necks similar to the ones at the 2005 eggfest. What kind of seasoning and wood chips? Indirect or direct? And how long? Thanks for the help.

    Smoked Turkey Necks
    [p]Ingredients:
    10 lb Turkey Necks
    16 oz Louisiana Crawfish Boil
    14 quart stock pot
    7 quart water
    big green eqq seasoning




    Preparation Directions:
    1 Wash Turkey Necks
    Cooking Directions:
    1 Fill stock pot with water.
    2 Add Louisiana Crawfish boil.
    3 Let solution boil about 15 minutes.
    4 Add Turkey necks and bring to a second boil for about 15 - 20 minutes.
    5 Turn stock pot off and cover.
    6 Let stand 15 minutes. (Caution the longer they stand the hotter they become).
    7 Remove the necks from stock pot and sprinkle with big green egg seasoning.
    8 Spray grill with non-stick spray.
    9 Put necks on grill at 275 degrees for 5 minutes, turn and cook another 5 minutes.
    Special Instructions:
    1 To spice them up a notch try sprinkling with uncle butt rub.
    2 Bar-B-Que sauce can be added in the last minute of cooking for a different taste.
    3 Serve with your favorite cold beverage.
    4 Eat and enjoy.

    Cutlet,
    I went with indirect 325 for 2 and 1/2 hours. Did 2 necks and other turkey parts in a small cast iron pot on top of stuffing. I have to say it didn't impress wife. All the little bones and nibbling to get a decent piece of meat got her really inflamed. I'll try again but not right away.

    I asked him at the fest and he told me 30 minutes in the crab boil I thought in a pressure cooker, and I could swear he had said he grilled them for 30 minutes. [p]Could be a case of too much protein clogging my memory cells.[p]Dennis

    Charbon,[p]Same here. Good flavor, but waaay too much trouble to eat. Swallowed a couple of the little bones and had to put up with a weird feeling of choking for a couple days. I'll leave the necks to the vultures. No, not the offspring..birds...birds.[p]mShark
