Found a little mexican market here and they have a butcher. The brisket was select and frozen so I passed. Sam's was closed so no brisket tonight. Any good recipes for these?These looked nice and marbled. I know as much about meat as Robin Roberts. Any ideas? Thanks.

@henapple-I do beef back ribs fairly frequently but here's a link that extolls the short ribs (which I picked up today) and sounds tasty. http://www.amazingribs.com/recipes/beef/BBQ_beef_ribs.htmlWhile I don't foil with pork ribs I do foil with the beef bak ribs-not sure how I will go with the short ribs. Oh man..those make great fajitas. I marinate in onion slices with salt and lime for about half hour, and grill like you would a steak, hot and fast. I cook to medium well for fajitas. Since its beef, I'd go with flour tortillas and a cascabel based salsa. Some sliced avocado also, and a tecate with lime and salt.

Braise them in a DO with a cabernet and diced onions, celery, mushrooms, bay leaves, beef stock, thyme, oregano, tomato paste, and S&P. 225 for 4ish hours.Romain Nowakowski Ashburn, VA
