Question about cook time on 2-2-1 for ribs

Put three racks of baby backs on a couple hours ago. Going with 2-2-1 method, but I don't think the second 2 or thr 1 will need to be that long. Done the first 2 and had a little trouble keeping the temp down to 250. Probably first hour closer to 275. Just took them off and wrapped in foil. Seemed pretty cooked but not done. Just put them back on for second 2 after adding apple juice and red wine vinegar (thought had apple wine vinegar but didn't). Temp still wants to climb closer to 300 and have the openings nearly completely shut to bring down. If temp hovers 275-300, think might take off at 1 hour, remove foil, then back on for maybe 20-30 mins. Anyone have any thoughts about shortening the cook time based on this?
