Boneless butt - remove netting before cook?

The 5.5 lb. boneless butt that I purchased is encased in a netting (probably string type, but have not opened the package yet) ... do you remove the netting prior to the cook, or leave it on? Just concerned that it will fall apart if I remove it prior to the cook.

  • meinbmw,
I've done two of these, indirect at 250°, and left the net on. Neither fell apart for me.

meinbmw,[p]I have only netted butts a few times. You should cook with the net on however........you may consider taking it off after it has cooked a while and has "set up". One problem I have had in the past is most of the meat sticking to the netting if I left it on for the entire cooking process. I've heard others have soaked theirs down good with olive oil hoping the netting would come off easier but I don't know how that worked out.[p]Rick
