Smoking wood combo question
KennyLee
Posts: 806
We're at the cabin for our annual New Years trip and going to smoke a brisket and pork shoulder together tomorrow. I have a couple bags of hickory chunks and a bag each of apple and oak sticks. Any reason a combo of the three wouldn't work with either meat? I've not done both together and usually use one kind of wood.
Unfortunately no Egg here and will be using an offset stick burner. Thanks in advance and happy 2014 in advance everyone!

I'd just use oak for both... Enjoy and happy new yearMSV Chill Spot

That's what I'd like to do but probably won't have enough oak to get all the way through the cook so I'll have to use some combo. Just want to make sure any combo will work with both meats

if you don't have enough oak, then i'd add in some hickory to make the rest

That was my thought as well. Appreciate the feedback. I'll save the apple for another cook. I've done both cuts with hickory and oak but never used apple for brisket.

First off i am no stick burner cook so if this sounds stupid, my bad. Could you start with oak while the meat will absorb the oaky goodness then as you need to add fuel use the hickory and apple? When i am using 2 different woods on the egg i will layer starting with what will be the sweeter on the bottom and what i want the main flavor (like oak on beef) close to the top so the absorption is higher during the beginning of the cook. I dont know if thus makes a difference or not, just the way i do it-----------------------------------------analyze adapt overcome2008 -Large BGE. 2013- Small BGE and 2015 - Mini. Henderson, Ky.

Think I'll start with some hickory chunks to get started then go with oak until it's gone.
