I trimmed 1 LB + of fat off a butt yesterday and the product was still to fatty. That was the first butt I have ever done that I wasn't happy with. The texture just wasn't right. I chalk it up to a bad piece of meat.
On the bright side, I vac sealed the fat to use in a batch of sausage.___________________________________
