snapper throats

great day fishing yesterday. I have heard of folks boasting of snapper throats, and they turned out great. I put jamaican firewalk on one side and tsunami spin on the other. I think I liked the heat better. unusual part of fish to eat. are there other fish that people eat the throat area of meat?

In addition to Snapper throats, we also like Trigger throats (from Triggerfish). I have always fried them, however, and served as an appetizer before serving the filets as the main dish. Good stuff when served with a dipping sauce like remoulade!!! -
we caught the biggest trigger I have ever seen! I will know next time, thanks for the reply.
