Christmas crown roast.

Did my first crown roast yesterday. Turned out pretty good, but a little fattier than I thought. All in all it was easy and nice presentation. Cooked about 2 hours indirect at 375, didn't have much room for stuffing so I threw some rice pilaf underneath mid way through the cook. Family loved it at least. I really wanted to do a suckling pig though :-(

  • Wow!.  That is some roast. 
    I thought I was doing good with the 7-bone Crown Roast I did.  Mine also took 2 hours.  I was doing my cook at 350 degrees.  Took it off at 145 degrees  IT.  I think another 30 minutes would have helped.

    I took it off when my probe hit 140, but I think it was at 145 is other places at the time. I like the pork chops medium rare. Much juicier.
