First Spatchcock Turkey! Pics!

Here it is on the egg at 350 indirect on top of a rib rack. This was a large turkey 18lb! Did a rub of butt rub and Swamp venom. It was so moist. Even more so than a fried one.
And the done bird!

I've seen many turkeys in my day and that is definitely one of them. Looks like it came out pretty darn good. How was the skin?

Skin was moist yet crisp. Very interesting! It tasted great and the meat was so moist! No injection needed on this bird! The backbone was a little difficult to cut out before the cook. Could have just been a dull knife.
