    I don't what to say about the first time, not sure if something odd happens first time using egg, but it really took a LONG time.  BTW, just finishing up another butt, 5 pounds, cooked for 7 hours at 270ish, until internal temp hit about 170, then foiled it, turned up heat to 350 and took about 1.5 hours to hit 200 so now FTCing it to eat for dinner in a couple hours.
    Rumor has it that the bark is better if you don't foil. I have always done mine lo n slo at 250° start to finish, no foil, so I can't say from experience. Just what I've read.

  • I've never foiled when I've cooked them. As for the times, I have no idea. I usually cook 8 pounders and they take around 14-16 hours at 250-275.

  • That definitely seems too long to only be at that temp but I am all about low and slow. So I would have no problem cooking at 200-225 for nearly that long. Turbo is good and has its own benefits but I like to plan for 16-18 hours for butts and if it gets done early, I FTC.

  • Oh no disaster, it was falling off the bone and all juicy and delicious!  Woo!  Fantastic!  Picture doesn't do it justice.  So good, and liking the finishing with the foil to bring from 170 to 200.

  • Once the meat is on, I never open the lid until time to check I T. Butts cook in about 2 hr/lb. While there is some variation, it is not 200%. On the other hand, I once tried a small brisket flat with great expectation but finally settle for a quicky meal when it did not get done until very late that night.

    Something was way off with this cook.  I have done about a dozen cooks of pork butts, usually doing two at a time - about 16 pounds total.  I cook at about 275 degrees and it usually takes 12 hours or less.  Seems like the temp was too low on your egg.
