Chicken taco salad

My wife got me some pans that you put tortillas in and then bake for 10 minutes to make taco salad shells. I grilled up two chicken breasts on the small. I seasoned the breasts with taco seasoning and threw them on raised direct @ 350. Pulled @ 160 IT. Salad bowls filled with lettuce, chicken, salsa, sour cream, cheese, & hot sauce. Easy peasy and very tasty.

  • Looks good!!! @Botch you can also use upside down muffin pans depending on how deep you want your shells to be. 
    I raise my kids, cook and golf.  When work gets in the way I'm pissed, I'm pissed off 48 weeks a year.
    Inbetween Iowa and Colorado, not close to anything remotely entertaining outside of football season.

    Great idea. I bet adding some Hatch brand enchilada sauce would be a nice touch. I add it when I make tostadas. Gotta be Hatch, though. No Old El Paso or other brands.

    I've never seen Hatch brand. I'll have to look for that. I think the enchilada seasoning I normally use is McCormick.

    Hmmm...I wonder if it is a regional thing. I find it on the ethnic aisles of our grocery store.

    Never seen it. I did try the Old El Paso and we didn't much care for it. I usually buy the seasoning packets and make our own.
