I ended up using peanut oil. I just pulled the steaks off and dome temp was 750 by the time I got ready to WOK shrimp. Was worried about EVOO smoking.[p]Man, those things cooked quick. Worst thing you can do to shrimp is over cook. I didn't. These were not near as good as Sandbagger's at OK but pretty tasty. I didn't get enough of a chance to reduce and I should have used more garlic and butter.[p]Thanks to everyone for helping me learn to cook on a WOK. Next time will be on a small at Arrowhead with The Chubster's gratemates.[p]Getting ready.

Eggcellent looking shrimp Mike.
These just out of the foil w/brown sugar and honey AND sauced with Grillmeisters special sauce that he gave me in Atlanta.
I also got thighs cooling off with Ken Stone's Solid Ball and Dizzy's course grind. Just trying to kill some time on this j-e-t-s-less sunday. But oh man have you got next weeks menu for me already set! I may add some scallops that I have in the freezer from Sams from a few weeks ago. Buying those in bulk makes it real hard to get rid of!

Hey, for the first time, I gave it a B+. Unlike my F- briskets before eveyone helped out.[p]Why, why. Dang it. Why didn't I cook ribs this weekend? Tammy wanted enchiladas on Saturday. That is why.
Sams has some good scallops. Have you ever wrapped in procuitto?

The scallops I have are too small to wrapp in anything. But they are perefect to wok 'em with shrimp. Im gonna add some olive oil and Goya sazon(ya know Nancys columbian taste) and throw 'em over some linguini. She'll be in heaven.
I completely understand why you wouldnt do ribs because of the Mrs...Nancy wanted chicken thighs which is why I did them. SO as you know the women are the real bosses behind our photos:)

I got that at an outlet mall. The name of the store was Kitchen Collection. They had the goodies. I'm going back this week. If they have any more, I can pick you one up and ship. They are about $10.[p]Mike

those wondeful things are called oyster mushrooms. Just a little EVOO, salt and pepper and what a treat! I believe it was Wooodoggies who got a bunch of us interested. I find them at Schnuck's. Got one down there yet?

Be sure to get fresh ones - they run 5.99 a pound here which I understand is dirt cheap. I notice that Schnuck's seems to have more on the weekends whatever that's worth. BTW I'm quite familiar with little Oran down the road as my wife's GP lived there.
