Pork shoulder roast is usually just a section of pork butt. Once in awhile, it is a section of the picnic portion. Either can be slow cooked for pulled pork. The butt bone, if present, will have a thin irregular shape, while the picnic will have a round cross section bone. Picnic meat can be cubed for kebabs pretty well, but the butt shoulder section is so varied that its easier to slow cook it.

The ham can be roasted. 350-ish till 160F internal. Slice thin across the grain.

Direct on a v rack or indirect on the ham roast

I say indirect for any roast unless you are cooking way high in the dome
