I put my Butterball turkey breast into the brine last night, it was still lightly frozen but the brine was warm so I thought they'd even out, and put it in the frig overnight.
This morning I drained and rinsed it, and the damn thing is in pieces!  About half the breast is intact, the other half is in pieces from about 6 oz to a 1" cube.  How in the heck am I supposed to cook this evenly?!?
There was a plastic net over the whole thing when I took it out of the package, maybe it was supposed to stay on during cooking, but the label is buried in the trash now.  I've done several Butterball breasts in the past and have not seen this before.

Wow, sounds weird.  Are you cooking on egg or oven? Do you have the Reynolds cooking bags? Might try that. Or try putting the small pieces underneath the large piece snugly and maybe it will cook evenly. Hope it works out.... [-O<

Well, here's what I got out of the Butterball Breast package:

And here's what I did with the smaller pieces and some toothpicks:

I used Mickey's coffee rub (seems to be the go-to for everyone this year) and the smaller pieces got rub on both sides before being "frankensteined" back together, so maybe it'll be like a turkey version of burnt ends…

Well, this morning I poked around on Butterball's website, and it looks like I bought a "Boneless Breast Roast", instead of a Boneless Breast.

The prep instructions include leaving the inner netting on until after cooking, and I didn't do that.  No harm done, but I'll know what to look for more carefully in the future.
    Today's sammiches were excellent!
