Beer Brats recipe???

So the meat grinder, pink salt, and hog casings came in today... now I need a Beer Brats recipe. When I google that, I get how to grill or prepare the sausage. Doesn't google know I have a BGE? That's covered.

I want to know how to make the sausage. :)

Any help is greatly appreciated!

    I typed in homemade beer brats and got a few links (no pun intended). Don't know how good they are but HERE is one from Serious Eats.

    I don't know what you are looking for in a beer brat, but I've made some bratwursts. They don't taste like Johnsonville at all, though. I'd say more authentic to the ones I got in Germany. BTW, with the use corn syrup and eggs, this was really "tacky" and was a PITA to stuff with just a grinder.

    Thanks Griffin... I was looking to make bratwursts that are flavored with beer. I have seen them from Johnsonville before. I think I may just stick to plain brats for the first batch.

    On a separate note, I am having a hard time finding veal in my area. Can I substitute part of a grown cow in its place?

    I don't see how substituting would be a problem.

    Well, "spa-Peggy" is kind of like spaghetti. I'm not sure what Peggy does different, if anything. But it's the one dish she's kind of made her own.

    I know Penzeys has a bratwurst seasoning blend http://www.penzeys.com/cgi-bin/penzeys/p-penzeysbratwurst.html?id=SoAfJPgW.  There are brief instructions on the web site.

    As fir the meat, I know it is either all pork or pork and veal - should not be a problem if all pork.  I would give it a try. BTW, I usually cook Johnsonville beer brats, I don't think there is any beer in them, but I simmer them in beer and onions (after grilling them).  One of our favorite meals!

    Most of the german style sausages I've seen call for white veal. There is no cut of beef you can use to get close to that. Look for Provimi veal or "milk fed". Try European butchers.

    My first batch I did I used a high country brat seasoning packet from sportsmans warehouse. It had a beer brat option in the directions but basically it was a bottle of beer added to x amount of meat and seasoning. Pretty good kinda a Wisconsin style brat if there is such a style.
