Brisket Flat & Sweet Potato Pie

#8 Flat...prep>injected w/ apple juice, rubbed w/ mustard then rubbed w/ dry rub I buy from a local butcher and I add in a little brown sugar and then wrapped in cellophane for 24+hrs. Slow and low 225F-250F lump w/ applewood chunks. Took around 11hrs for it to reach i.t. of 200F using FTC methodology. The sweet potato pie was made w/ a recipe my wife snagged from Pinterest. Baked the sweet potato pie on BGE 400F in cast iron piepan for 18 minutes. Made for an enjoyable family dinner in celebration of our Son's 19th Birthday party. Happy egging.
