My buddy and his wife just had the blessing of their third child so I figured I could make some grub for them to make dinner time easier. Beef done with Raising the Steaks and two pork butts, one Raging River, the other Cowlick.

Thats real swell of you.  Nothing pleases an egghead's heart more than gazing upon a cooker loaded with meat :)

I'm assuming that those netting things meat comes wrapped in are heat tolerant? I've never known whether to leave them on or not,  so i usually  take them off.  Will leave them on next time.

  • I leave them on because the when I get butts that small they have alot of fat so it keeps the meat together. I'm sure it would be fine to take them off. Those butts are about 3.5 and 4.5 pounds. If I was cooking for a crowd I'd at least gone at gotten bone in butts from Sam's.

My wife bought me some of them at some place she was at. Never used them cause I enjoy tying but when I get meat with them on I just leave them. They are a hell of a lot easier to remove than 20 feet of butcher twine

You are one of the good guys. No one listens to VI anyway.
