    Swai is good stuff.  My buddy does a Friday fish fry all through lent.  They switched to swai years ago.  One Friday their supplier was out and they got catfish.  Everyone complained.

    Squash was 375* indirect about 45 minutes. Is now tented in foil. 1/2 EVOO and BBQ rub(mine), 1/2 EVOO/Salt/Pepper/Cinnamon/Nutmeg (SWMBO's). Swai is on now, direct at 375* coated with EVOO and a lemon orange pepper seasoning on a bed of lime slices.

    Here's the finished swai. I really liked it, was a bit heavy on the pepper for the kids. SWMBO didn't care for something on her squash, thinking probably nutmeg. Mine with the rub was great.

    I love swai and just discovered it at a Korean restaurant here in town. Basically Vietnamese catfish they serve it in a dish called fiery Saigon! I could eat it all day long! Lightly breaded fried nuggets drenched in a very spicy red glaze served with jasmine rice and steamed veggies! After a few more lunches there I am going to try to massage the sauce recipe out of the owner!
