Came out pretty good.
These have been showing up at SoCal Costcos recently for $2.79/pound. Fairly basic rub (Pepper, garlic. Onion, salt, Paprika, and a bit of Cayenne(. Started it at 9PM and went to bed shortly thereafter. Woke up a bit before 6 - 163 internal, 280 Dome temp. It went up to 167 withing an hour, so I figured it was through the plateau. Wrapped it in foil, poured some drippings in, opened it up a bit to 325. Pulled a bit under 2 hours later at 190. Wrapped it tight and put it in a thermal bag for a bit under 3 hours. Separated it, sliced it and chowing down.

I got mine in Rancho Mirage, and they've been spotted in several others - La Habra is mentioned frequently as is Burbank, Torrance, and others. I rushed right out and checked at the Carlsbad location; no joy. Needless to say I'll be stopping in much more often just to take a peek. Thanks for the heads up.B_BFinally back in the Badger State!

Make sure you check that part of the Fresh meat section where the PRIME meats are located (blue styrofoam packing). It is not with the regular CHOICE grade meat.
