Eggs Hussarde

I know it isn't really a BGE type recipe, but does anybody have a favorite Eggs Hussarde recipe that you'd care to share with me? Thanks!

RRP, here's one:
Eggs Hussarde
Ingredients
4 slices Canadian bacon
4 Holland Rusks
4 poached eggs
1 1/2 cups Hollandaise Sauce
Marchand de Vin Sauce
1/3 cup minced mushrooms
1/2 cup minced green onions
1/2 cup minced onions
1/2 cup minced ham
2 or 3 garlic cloves, pressed
1/2 cup butter
2 Tbs flour
pepper and cayenne, to taste
3/4 cup beef stock
1/2 cup claret
salt
paprika
Procedure
Marchand de Vin Sauce
1 Lightly sauté vegetables, garlic, and ham in the butter until the onion is soft.
2 Stir in flour, pepper and cayenne.
3 Brown mixture lightly, about 10 minutes, stirring constantly.
4 Blend in stock and claret.
5 Salt to taste, cover and simmer 15 minutes over low heat. Stir ocasionally. May be refrigerate dif not used immediately. (Yields 1 ½ cups)
The Eggs
1 Grill Canadian bacon and place on rusks.
2 Cover with Marchand de Vin Sauce. Top with soft poached eggs.
3 Ladle Hollandaise sauce over the eggs and sprinkle with paprika. [p]Servings: 4

you could make that egg related. theres a place that i go to in maine before skiing that serves a breakfast called moose biscuits. halve homemade buscuits, add a slice of smoked ham, 2 slices of bacon, a poached egg, ladle some hollandaise sauce on it, and then add a slice of smoked tomato. i look forward to this breakfast every winter
