Atomic Mushroom Caps

I've been working on a recipe for stuffed mushrooms that has all of the ingredients that ABTs have. The reason for it is that our peppers were too small to stuff and this turned out to be a tasty alternative. [p]1/2 package cream cheese
3 T minced jalapenos
1 T sour cream
1 clove minced garlic
2 strips of crumbled bacon
1 heaping Tablespoon of Dizzy Dust[p]This will stuff 10-12 medium muchroom caps. Scrape the gills out to reduce some moisture or they may squirt. [p]I'll have some at Eggfest along with some Jerk Shrimp. Stop by and check them out. I'll be with Piggin and Grinnin. [p]Mark

that recipe looks good! Any suggestion on time and temp?
Re-gasketing the USA one yard at a time -
RRP,[p]Usually 20 minutes at 275 or so. Until they get a little color and warm through. I also garnish with a little Dizzy Dust. [p]This recipe has replaced ABT's at our house. It's much quicker, we think it tastes better, and it can be done after work with time left to sit on the porch with a glass of wine while they cook. Thanks to Rumrunner for his help with it.

DTM,[p]I have made some hunter sausage but it's been a few years. Where did you see the recipe?

Babyray,[p]I use the white button mushrooms, but I don't see why you couldn't use Criminis if you wanted to.

I've made and it would be good for a competition. [p]2 lb lean pork butt
1 lb hickory smoked bacon (Sam's has one called -Peer?- Gourmet Bacon)
3 cloves minced garlic
1 tsp sea salt
2 tsp gnd pepper blend
1 tsp gnd coriander
1 tsp freshly grated nutmeg
1/2 tsp gnd ginger
2 tsp dry mustard
1 Tbs whole yellow mustard seed
1/3 cup dry white wine[p]Grind the pork and the bacon, mix with other ingredients
Stuff into casings

I spent some time in both places in my earlier life. Are you in TN? I know a lot of folks in the Smithville McMinnville area. Bunch of nurseries there.
