edited November -0001 in EggHead Forum
Mad Max and other local NOVA folks (I am located in Chantilly VA). I have been tasks to cook for Father-inlaws 65th Birthday Party. I have decided to do Prime Rib, and there wiill be 10-12 adults. I was planning on using bone-in, ? what size, 5 or 7 bone? Has anyone bought a Rib Roast from Giant? If so how was it? Costco only carries boneless ones, any other local places? Not sure if I will have time for a trip to Union Meats in DC, anywhere closure to get good quaility Rib Roasts?[p]Anyway I was planning on using Mad Max's method below. About how long will this take if I do around a 5 to 7 bone if I follow instructions below? I have seen around 13 minutes per pound is this a good assumtion?[p]Any other tips and Words of Wisdom will be much apprectiated.[p]

besides buying prime grade down at union meets. . .i buy lots of rib roasts with great results at my local safeway (their angus reserve, which is usually 'choice' grade). .. talk to your meat counter man there and tell him exactly what you want and he'll get it for you. ..also, i'll bet you could get good rib roasts at wegmans. . and you can pay 24 bucks for prime if you want at balduccis . .but for the money, you can't beat the ones at safeway (on sale with a safeway card they can be as low as 5.99 per pound. ..i figure 1 bone for every 2 people. ..so if you are having 12 adults, figure at least a 6 bone in roast. .. heck, you might as well get the whole 7 bone roast. ...now, that probably won't fit whole on the egg, so you should probably cut in two and have a 4 bone and and 3 bone.. .two roasts like that should fit on a large just fine. heck, that way you'll have 4 end slices. ... [p]as far as my method, if you buy at the safewy, you won't get that big fat cap wrapped around it. . ..that's ok!!. ..there will still be plenty of fat on the roast. . .just season the whole thing with olive oil, salt and herbs de provence, then sear and roast as discussed. . .figure on 15 minutes per pound for medium rare. .[p]shoot me an email if you have any other questions[p]max
