Cross cut beef short ribs marinated in fajita seasoning and EVOO and grilled jicama. Jicama was coated with EVOO, chili powder, lemon juice and sea salt. Low carb and really good.
1 Large BGE, 1 Mini BGE, 1 Minimax BGE, Original wife and 3 dogs living in the heart of BBQ country in Round Rock Texas.

    Jicama has replaced potatoes in our house because of the lower carbs and taste. SWMBO likes it best grilled, I agree. 1/4" slices cook quickly and are still crunchy. Makes good salads too.

    Always did the jicama with lime and salt. Never thought of grilled jicama. Next on the short list. Thanks.
    Salado TX & 30A  FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd.
