Best chicken breasts I have ever cooked. Actually a tad overdone at 163 Boneless/skinless Marinated for about three hours. Marinade consisted of lemons, limes, a jalapeño, chili powder, cumin, coriander, salt, pepper and one bunch of cilantro. Cooked raised direct about 420, @ 8 mins a side. Served with roasted green and poblano peppers and onions. All tossed with reserved marinade and topped with avacado (basically fajitas without tortillas). Grilled pineapple for dessert. Nice way to end a fun day in the pool.

A thermapen is definitely on my short list. Just have to fully justify all of my eggcessories that I've added to date before I bring another one in the house. :-)

I truely think back at myself, over the years ooking pork chops!!! You talk about overcooked meat --- my internal must have been 250 degrees!! No wonder they were sooo dry!! Thank you Thermopen!!

Anything you are cooking at 350* + you should take it off 5 degrees or so before target temp as it will continue to cook after you remove from the heat for a couple of minutes. Nice looking cook.

I agree Scottborasjr. I was distracted by the kiddo, and missed the timing a little. I was surprised, however, the temp was over 160. Before the thermapen, I would have probably cooked it just a little longer, you know, to make sure I would not be sick Now I've gotta change some of my cooking habits, but for the better.
