New toy from Kijiji.

Picked up a brisket/bacon slicer today from an 80 year old Polish butcher.  He'd been a butcher for 60 years and was still making sausage in his basement when I showed up to check out his slicer.

Slicer is an Omcan 1/3hp with a 12" blade.  All metal construction too, this thing should last me a while.

Cleaned it up and oiled it and it's as good as new!!

Paid about 40% the price of a new one and got a coil of Polish ham sausage thrown in as a bonus.  image

Just chilling my first batch of homemade bacon to test this unit out on.

The old fella' had a 2hp grinder that looked like it could chew up a t-rex, and a huge upright sausage stuffer as well.  He was mentioning that today might be his last batch of sausage so I asked him to give me a shout if he decided to pull the pin.  If a guy can get the rest of that gear for a good price, I'd be set.

P.S.  I smoked some maple bacon on the Egg today and my wife and I just tried it.  As soon as we bit into it we both instinctively looked at each other with shocked expressions at how unbelievably tasty it was.  Lol.

The first thing she said when she finished her bite was "I Can never eat store bought bacon again."

Bacon seems to have that effect!

So jealous.  I'd love to find an older, well-built meat slicer.  Both new ones I've tried in the last year have been returned, absolute junk.

Thinking of my wife's reaction if she comes home to find a commercial meat slicer on the counter. Would be hilarious until me and my slicer were curled up in my truck for the night. How do you store something like that?

So far, right in the middle of the island.
    :D

I'll clean out a cupboard and take it over from my wife.  God knows she has enough of them full of things we never use.

I played this one fairly well.  I took her to a restaurant supply store first and we looked at an economy version with the smaller 10" blade for $800.  Then I came home and found this one online for half that, and twice the machine.  It pretty much sold itself.  The fresh bacon was just icing on the cake.

......ok, that and she gets her new deck this year.

When i bought mine i found out just how heavy they are, so the next day i had to purchase a "roll around" table - that almost cost as much as the used slicer!!
