Often times there is a large strap of sinew that holds that extra piece of meat on. If that is the case, you are better off trimming that off. Sometimes it is just an extra flap of meat without as much sinew and that is just bonus.[p]So yes, sometimes you have to trim the stuff up that comes from the big clubs.

I purchased one of those 3-pack cryovac pork spares from Sam's for this past Eggfest in Waldorf, and with the guidence of Nature Boy and Bobby-Q, you can see I did alot of trimming.
Depends on what you want in terms of how much you trim. Since this was an event with alot of food going with alot of people and want to make a nice presentation then you want to make each portion small. If your just at home and want alot of meat per rib then you may not want to trim as much. The second photo was me cutting the trimmings that I cooked with the ribs, so dont throw the trimmings away! At home I usually freeze the trimmings and use them for the meat when I make homemade pasta sauce.

trim as much as you feel necessary. with larger groups i trim them down to st louis style size. if its just a few i only trim off the flap and remove the membrane, i will cut them down after cooking and save the excess chine? area for later snacks
