My best brisket ever

I had a nine-pound brisket in the freezer; nothing special, just one from Costco. Defrosted it Friday, rubbed it Saturday and put it on the grill at 10 a.m. today at 200 degrees indirect. I stupidly broke my plate setter yesterday and so just cooked it on a raised grill with a foil pan underneath. Wicked Good Competition Blend charcoal and some soaked apple chips.

I've been cooking my briskets to 200 or so internal and then have been disappointed that they were tender but dry. So today's guest went to 190 degrees (I boosted the temperature to 250 dome at the end because we were getting hungry), and then let it rest for a half-hour. The result was the juiciest brisket I've ever cooked, and it was plenty tender.

So I think it's going to be 190 briskets from now on!

    Cool, nice to see that worked for you. Hopefully that will be a good number for you but as we all know, each brisket is different

    Nice job. 190 was the magic number on that one. The next may be 210.
