Lighting the egg question

In this video, upon lighting they recommend taking the egg to around 500 degrees and then lowering the temp down to your cooking temperature (around 6:30 min into the video).  Anyone do it this way?

  • I only do it when when I'm doing 400 deg direct cooks with the daisy wheel vents open. I already know how much I need to open the draft vents. IMO it's easier to stablize the egg to 400 deg for me.

    I start my egg and leave both vents wide open -- allow it to fart and shoot up to 500 degrees, set the top vent on the egg - but the cast iron wide open -- my egg will drop back down to about 330 and slowly increase -- on this increase is when i start closing the top vent off to level out at my target temperature -- while it is stabilizing -- thich takes about twenty minutes..
