Cajun Jambalaya
This recipe is one of our favorites. You could cook it inside if you wanted to, but that sounds booooring to me. So I always cook it in the Wok on the BGE instead.
Dang good recipe, and really easy to do on the egg. Y'all should try it out sometime.

Very good looking. I do something similar that is always a hit, but never did it in a wok on the Egg. I will have to try that next time.
Mine has yellow rice and chirozo, but otherwise it quite like yours. Good pics and good cook.

It looks like after the initial high heat to cook veggies, the temp is slowly brought down so that the rice is not burned.
This might be something to try for the Oklahoma Eggfest because it can be put together, cooked, and then kept warm while you cook something else.
That is... IF there's an Eggfest.

I have always made my jambalaya from recipes from Justin Wilson. They do not seem as fancy as Emiril's, but I think they are closer to the land, so to speak. Simple and hardy.

Sure @hapster Dutch ovens are perfect for jambalaya and I guess now we know woks are good too!

@Logger, I think the dome temp was somewhere around 325 deg f when I threw the veggies on...Once I threw in the rice and chicken broth, I cranked it up slightly to get the broth to a nice simmer....then I cranked it down a little bit to finish.
@hapster, a CI Dutch Oven would work just fine too. I personally like using the wok for the jambalaya though, as I find that I can get the broth up to a simmer a lot more quickly. That's probably due to the wok's thin carbon steel material. It's easier to clean IMHO too.
@Griffin, you suck....nuf said.
@Solson005, I just close the lid of the Egg....I open it every now and then to give it a stir.
@r270ba, who ended up winning? My wife and I went to see Jack the Giant Slayer today, so I didn't get to watch the game (movie was good BTW)....:) You should head to Spartanburg next weekend. A few of us will be out there cooking up some grub. Here's the thread about that:
