This was amazing man. Something I've been wanting to make for my egg for a while now!!! Thanks for the write up! Did you have to go low to get the turkey stand to fit? I was thinking it could just come out the too if I took the DW off._______________________________________________XLBGE

Thanks @MrCookingNurse I've been trying to find a method to make a pit on the egg too. @Zippylip 's Gyros, a blow by blow - vertical spit definitely got the ball rolling and I finally came up with this method.I did it low to have it closer to the heat and I wasn't sure how hot the top of the spit would get. I used the coat hanger looking handle to lift it out of the egg and probably couldn't have done that if it was just sitting on the grate. You can see towards the end the pie plate was getting pretty full of juice so it was a delicate operation to get it off the egg and back inside.Large & Small BGE, CGW Two-Tier Swing Rack for BOTH EGGS, Spider for the Wok, eggCARTen & and Cedar Pergola my Eggs call home in Edmond, OK.

Looks great and I love El Pastor, but it also looks like a lot of work. You did a great job with the cook and with your documentation!

Wow!! That is impressive. The pork, homemade tortillas and all the guac and salsa! Bravo! Glad I don't have dial up with all those pics.
I only see one problem, though. That new handle. I kid, its a work of art. Very cool.

Thanks @SmokinDAWG82 it was well worth the process.
Thanks @Griffin we usually do dinner on Sunday night and my cousins 13 yr old son has been my helper the past couple weeks so we just made a afternoon of it and did everything from scratch.
I figured some of you Texas guys would have a comment or five about the handle. Danny does great work and I like that it kind of ties in to the mobile "chuck wagon" part of my small egg.Large & Small BGE, CGW Two-Tier Swing Rack for BOTH EGGS, Spider for the Wok, eggCARTen & and Cedar Pergola my Eggs call home in Edmond, OK. -

"Sum" or "some" it up?? Joking. 8-} Agree, this is a solid cook.Columbia, SC --- LBGE 2011 -- MINI BGE 2013 -
Incredible! Cooking everything from scratch, on the Egg, including the tortillas is beyond impressive. The fact that you included the 13 year old is another bonus. This is one of those "raise the bar" type cooks.
That tomatillo salsa from Rick Bayless's cookbook is dynamite. My wife made that last summer, and it's delicious.

Thanks @SaltySam I think we got him one step closer to convincing his mom they need a Big Green Egg. He is really taking a interest into cooking on the egg. The grilled garlic and orange guacamole is really good too! Actually all of Rick Bayless recipes are pretty tasty!Large & Small BGE, CGW Two-Tier Swing Rack for BOTH EGGS, Spider for the Wok, eggCARTen & and Cedar Pergola my Eggs call home in Edmond, OK.

Thanks @Aviator I think I found another great way to cook on the BGE! The pork wasn't too labor intensive, the tortillas, two salsas, and guacamole were the time consuming things. Well worth the effort.Large & Small BGE, CGW Two-Tier Swing Rack for BOTH EGGS, Spider for the Wok, eggCARTen & and Cedar Pergola my Eggs call home in Edmond, OK.
