Dr. BBQ's Ribs-real good

<p />I bought Dr. BBq book last week and tried the "championship Rips". They were the best I have made so far. I recommend the rub and the sauce highly. I used the 3-1-1 method with honey, brown sugar, and apple juice during the foil phase. Simpley awesome! this picture was with about 15 minutes or so left.

    JerseyMatt,[p]I also use his recipe and it has always turned out fantastic. Everyone raves about the ribs when I bbq them that way. This past weekend we had friends over so I bbq'd 4 racks of ribs and an eleven pound brisket using his recipes. It had to be the best brisket so far, so definitely use the injection. There was no food left as most people had seconds and thirds. If it's called Big Time BBQ,its gotta be the darn good.

    thanks for the tip on the Brisket. I love to cook Brisket and just got an injector. Sounds like fate to me!!

    JerseyMatt,[p]Aren't they yummy? I just love them. Had them again last night. I had experimented with making them ahead and freezing them before step 3 and then did step 3 last night. Those suckers are just the best ever![p]Gwen

    In the words of my 5 year old "Keeper dad". I did do a tiny bit of substitutions. For example I used Chipotle Peper instead of Cayanne. I don't know what mace is....and I put apple juice in the sauce. They were really good :)

    I, also, have had great results with the championship ribs. I have had many people tell me they are the best ribs they have ever had. I've been very happy with the book, best BBQ cookbook I ever purchased. I plan on trying the brisket next week.[p]BTG
