beef questions. Top Round/Top Sirloin/Pit Beef

edited November -0001 in EggHead Forum
Hi
is a Top Round the same as a Top Butt?[p]Top sirloin steaks can be cut from a Top Butt.
And I've heard of Pit Beef sandwiches which come from a Top Round.
My meat guy says this is all the same meat.
Is this true?
Thanks

meat lover, time to find a new 'meat' man as he's feeding you a line of crap. NO they are not the same. The Top Butt is from the Sirloin. The Top Round is from the Round. BIG difference in texture, taste and tenderness. Pit Beef can come from the Top Round. It can come from the Eye Round. Pit Beef can come from any piece of meat that you want to make it out of.

  • Rumrunner,
thanks![p]So if i want to cut my own sirloins (for TRex), then I can get Top Butt. His (wholesale) price on that was $3.25 Prime, and $2 somthing for Choice. A lot cheaper than paying $8.95 (or more) for cut Top Sirloins at retail.
