<p />Headed to my local (45 minute drive 1 way) Italian deli tommorrow. Any other great tips? I really don't like the Pancetta, just to much fat. Did I see you wrap proscuitto around watermelon? Have to go out of town Friday, be cooking on old gassey for 3 days, but will be picking up scallops, filets, any other suggestions to use a lb. of that great stuff? Other than just keep eating it?     Try bresaola (air dried beef), layer on a bed of arugula and drizzle w/ good EVOO, a squezze of lemon juicee and fresh salt & pepper.[p]Speck is a good alternative to prosciutto, though it is more salty.

    not watermellon. .. .cantelope. . .cut up cantelope into large bite size pieces. . ..wrap each piece in slice of prociutto, refrigerate until nice and cold .. . then eat. . .yummy!!!![p]have you ever made the flank steak rolls yet??? . ..[p]serve it on sub roll with honey mustard and brie. .. my favorite sandwich. . . [p]of course, wrap it around sweet abt's instead of bacon. .. .[p]toss pasta with a cream sauce with prociutto . ....

    mad max beyond eggdome,[p]part two...[p]makes a great pizza topping. . .[p]use it instead of pancetta in giada's torte/pie w/ parmesan cheese (don't forget to buy a good brick of parmesan reggiano when you are at the deli :) ) if you want it i'll send you the recipe. .we had it again last night and its one of the best things i've ever made, it is that tasty...[p]make your stuffed portobellos, and lay a slice right on top while they are in the egg. .. .[p]maybe you better buy 2 pounds... . heee

    I did the canteloupe last year. I thought someone tried watermelon also. I'm cooking on my gasser so, pizza is out of the question this weekend. [p]I really like the cheese grated and sprinkled on zuchinni.[p]I'm kind of limited until I get back.[p]Mike

    I like those with a little pepper sprinkled on the melon first, but that is not to everyone's taste. Still, give it a try on one chunk and see what you think. [p]Brett
