Quick Salmon Dinner

Nothing fancy here, but continuing on with @Village_Idiot theme tonight of getting this place back on track, I thought I'd share our quick dinnner. Trying to get some healthy food in after this weekends cook, so we went with salmon. Mine just had some Old Bay on it, Mrs. G used some of the pesto my brother and his girlfriend made. 350 on the Mini along with some apple wood chips for smoke. Already getting tons of use out of the Mini.

    Looks nice Griff.  I never really, really liked salmon until I started cooking it on the egg.  Steel head trout is another favorite of mine.

    Salado TX & 30A  FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd.

    @Mickey - do you mean the actual plate or the plating? I believe the plate was brought back from Europe when my Dad was in the service. Could have come from Spain or Morocco. They have a bunch of them, so I snagged two (a small one and a large one) for picture purposes, since they never use them (they are wood, so knives will cut them). Turns out most food won't photograph well on them as the brown color seems to make food not look that great. I'm sure there is some reasoning behind that, but I don't know it. I wasn't gonna take any pictures, but at the last minute grabbed the camera since it pretty much lives right there in the kitchen.

    Not really. My brother was born on a Naval base in Spain (Rhoda, I think it was). I was conceived over there, but Dad was wrapping up his time and got back to Dallas before I was born. Dad was a doctor on a sub.

    Looks great, I love Salmon on the Egg. How did Mrs G like the pesto on hers? I use a brown sugar, mustard glaze on mine and love it, but the pesto sounds interesting. 

    Looks perfect on the mini, did you leave the skin on?
