How long would you guys feel comfortable putting a spatchcocked bird in the fridge before egging?
Thanks,
Chris

Overnight uncovered is all it takes to get the skin crunchy. Maximum length? Dunno. If it starts smellin' funky, that's too long
) I suppose it depends on how old it is to start with.

Thanks Nola. Grilling for the Bama/Mizzou game tomorrow @ 2:30. I was hoping it wouldn't be too long to prepare the bird tonight.Killen, AL (The Shoals)XL, Small, Minimax, and Mini BGEs

I put mine in the fridge last night with a light sprinkling of salt to make sure the skin is crispy.Sarasota, FL via Boynton Beach, FL, via Sarasota, FL, via Charleston, SC, via The Outer Banks, via God's Country (East TN on Ft. Loudon Lake)
