Apple Cake

Decided to try an Apple Upside Down Cake

Melt one stick of butter in CI skillet

Add ¾ cup sugar

Add apple chunks to cover the bottom of pan

Cook over med-low heat for 20 minutes

Add ½ cup chopped walnuts

Note the lack of walnuts - I forgot.  More on that later.

1 Box yellow cake mix

1 cup sour cream

1/3 cup applesauce

2 TBS oil

¼ cup water

¼ cup sugar

3 eggs

1 tsp vanilla

½ tsp cinnamon

Mix batter and beat for 2 minutes.

Pour over apple mixture

Bake at 400 Dome for 50 minutes

You may want to use a bigger skillet or less batter.  Glad I had the foil under it.  When I saw this I figured I was now documenting a major disaster.

This side looked good

Inverted out of the CI beautifully. No sticking except the overflow on the outside of the pan.

Finally remembered the walnuts, so just sprinkled them on top.  It turned out great - very moist and tasty.

Nest time, I'll probably try using a spice cake mix.

It's not a science, it's an art. And it's flawed.

  • That looks wonderful! What size skillet did you use (that you wish was bigger)?

I used the lid from my Lodge Dutch Oven.  It's 10 inches, but only 1 3/4 inch deep.
