Selling pulled pork at a work fundraiser Friday

Hi
I'll be making some pulled pork sandwiches for a fundraiser this Friday at my work. I'm thinking of buying a 7-9 lb (possibly 2) roast tomorrow and start cooking in the evening so it'll be ready Friday morning. Our event is from 11:30am-1:30pm. How long do you think it will stay warm in my cooler?
Also, should I mix in sauce before hand and bring extra sauce or just let them mix their own sauce in there?

what time do you leave for work? i'd get them in the egg at 260-275 as soon as you get home and they SHOULD be done by the am. Shoulders are a strange piece of meat and sometimes take a lot longer to cook than expected. I'd go closer to 275 honestly. Sauce wise, if you're pulling ahead of time, mix in a little spicy vinegary sauce. And leave some sweet baby rays or something generic on the side.

Xray , any sauce recipes you would care to share? I had one that was pretty vinegary before from an old weber cookbook (LOL) but would always like something new to try.
I normally leave for work at around 6am but since the event is at 11:30am, I might work from home for a little bit till it's ready. I would like to try and bring it there pretty warm. I will probably start it tomorrow night around 7-8pm. What do you think?

Started it today about 3pm and left it at 250. Starting temp of the butt was 40 degrees.San Diego, CA

Update though. the egg has been holding steady at 250 for 4.5 hours now and my thermometer says 160 already. The roast is 9.79 lbs so I'm pretty sure it's not close to being done. I might have to use the fork test method now. Lol.San Diego, CA -
When u pull them at 195* wrap in foil then a towel place in cooler and they'll be plenty warm when u start pulling them at the party. I do this often for coworkers.

195 is not the exact temp.. do the probe test, check at 195, and if it slides in and out of butter take it off. Window is 195-205.

I was thinking of doing a fundraiser for a co-worker. What do you plan on charging for the sandwich? Are you including any sides?

I think folks would easily pay $5 for just a bbq sandwich without sides. Add sides and you may be able to get a bit more.

I just pulled it off. Got scared cause when I walked downstairs the temp on the thermometer read 182. I fell asleep:) I took my fork and stuck it in the butt to twist and it was pretty tender. I wrapped it in foil right now and put it in a cooler and will probably take it out in about an hour or two to pull/sauce and take it to work.
The fundraiser we're doing this for is YMCA camps for underprivileged children and also Challeged Athletes Foundation. We are also selling hot dogs and burgers as well. They're charging $7 for some kind of sandwich, drink and chips. I thought it was a lot but I guess they've done this before and people are okay with it up here.
I'll take some pics when I'm done pulling it.

I don't think $7 is high. It isn't cheap but certainly not high.
The local churches do BBQ for fundraisers and charge between $8-10 for a sandwich and side of rice and hash (SC thing)
If you go to a BBQ place like Maurices it is $7-8 for a sandwich and fries.
And considering this is home made I think $7 is def a fair price.
And I'm jealous. I'd love to do a function like this. Cool stuff.Boom -
I agree $7 isn't too much for a sandwich, especially if it comes with chips and a drink. Good luck!

When you finish, can you give us some data about how much you cooked (lbs.) and how many sandwiches you made? I've thought about doing something like this as a cancer research fundraiser and would be interested if you thougth it was worth your time/effort.

I didn't get to take pictures of the finished product just cause things were a little hectic this morning. I spent about $20 for a 9.79 lb roast, $2 for 24 buns and $3 for sauce (didn't have time to make my own). We sold 24 sandwiches @ $7 each. It wasn't too bad. We sold hamburgers and hot dogs but surprisingly, everyone was in the line for the pork. Some even came early just for that. I'd say I netted $150 just for what I brought. We brought what looked like 50 hot dogs and about 100-150 hamburgers. All sold out.
I'm already thinking for the next 3 weeks, I will add some tri tip on there (since it's on sale) and maybe something else that is easy to cook/prepare.
