Ham & Cheese Breakfast Muffins

I experimented this morning with a little breakfast recipe. Ham and cheese cubed up in a cornbread muffin mix. 375 degrees for about 20 minutes, and I got PERFECTION! Now I did these in mini muffin tins right on the baking stone.
Anybody do something similar? Any improvements I can make?

Is that a Mini you are cooking on? I didn't think there was a plate setter for the mini? Would love to pick up a mini for camping etc. The XL obviously isn't easy to move.

You could add some roasted peppers. Maybe jalapanos if you like spicey food, or pablanos for a more mild flavor.

Looks good! When do you do legs up versus legs down on the PS?

This is a Large Egg. I used mini muffin tins.
I only flip the platesetter if I want to use the grid to hold my food. Such as smoking or long, slow cooks.
If you're just baking, you can use the platesetter, legs down.

BTW:
That Looftlighter is the only way to go for lighting the Egg!!! I LOVE IT!!!
