I am typically a Deviled Egg purist... eggs, mayo, mustard, paprika... boom!  A buddy of mine says he put chorizo in his, he puts chorizo in everything, and I thought why stop at chorizo and why not spice up the deviled eggs. Here is what I did...

1/2 pound chorizo
1 shallot
2 cloves garlic
3 chipotles in adobo
1 t dijon mustard
Mayo, I prefer Duke's, a couple of big spoonfuls... till it looks right :)
Tapatia or other hot sauce to taste
kosher salt to taste
black pepper to taste
red pepper flakes
6 eggs
red food coloring

hard boil the eggs however you do it
when they are done I cracked the shells all over-- I saw this in a Easter egg dealio and thought it would look cool in this application
put them back in the pan, covered with cold water, and add enough red food coloring to make the water quite red
the idea is to get something that looks like this

It is purely for looks and didn't work as easy as the Easter egg article indicated it would, doubt I will go to the trouble again
I let the eggs sit in the water for about 3 hours
in the meantime I cooked the chorizo breaking it apart as it browned
set the chorizo aside
pour off the drippings leaving about 1 T in the skillet
sweat the shallot and garlic gently until well softened-- no brown! :)
set that aside to cool
then peel the eggs and split like any other deviled egg
in with the yolks I added the mayo, chorizo, shallots, garlic, chopped chipotles and adobo sauce, dijon, tapatia, and salt & pepper to taste
fill the eggs
sprinkle on some red pepper flakes 

Tasty... I want hotter, but they were still tasty!  I hope you enjoy them

    Egg_Juju..Da-yum that looks great!  Definitely went to the top of my to-cook list.   Betcha a roasted ghost chili or a chili pequin would make it hotter ;-)

    Egg Juju, Sundrop is a citrus soft drink along the same lines of Mountain Dew, highly addictive, kinda a regional item.
