In-Law Pizza 3-29-12

Hosted the In-Laws for lunch. Pizzas made with Publix seeded dough, tomatoes, spinach, zucchini, peppers, onions, sausage, pepperoni, mushrooms and cheese blend.
Cooked at 400, per the package. Wet wiped the stone before placement, removed parchment at 5 minutes and rotated the pie every 5 minutes. Cooked for 15 minutes.
Used the Maverick on the stone, and it was interesting to see the difference between the dome thermometer and the Mav. Plate setter, legs up, stone resting on bricks on the PS.
This is the best set so far, crunchy crust with no scorching. The last pic is what was left :-)

So, did you wait till the stone was 400?
What was the temp differences?Bx - > NJ ->TX!!!All to get cheaper brisket! -
I based it on the stone temp as indicated by the Mavrick. The dome temp was higher, at first as much as 100 and after everything was hot only about 25 degrees.

Good Looking Pizza. I cook my pizza's on the plate setter with the legs down at 450. The wife bought me a pizza stone for xmas...but I like just using the plate setter. Each to their own!!!

I just wonder how close to the actual temp of the stone that probe would be as it is resting on the clip?? Be interesting to compare to an IR thermo.Geaux Tigers!!!
