Eggers - I want to smoke a bunch of boneless and skinless chicken pieces on my 3 tier grid. Anyone have suggestions on heat and times?

I would go for 350º I think lean meat and low and slow aren't that good a combination.Gerhard

I do indirect chicken legs all the time and they work out good but lots of people like cooking chicken direct.Gerhard

i like a hot and fast raised direct cook with boneless skinless thighs, hot enough for some charring to make up for the loss of flavor from going skinless. thighs will be more forgiving with the three tier setup, they can be over cooked a bit without drying out like white meat

Marinate overnight in Italian dressing and smoke with your favorite wood indirect at 275 works for us.

Bamafan- Getting your grid up to the felt level or above and cooking over direct heat....no plate setter (or stone in spider if you go that route for indirect)...

Bamafan - if you have 2 grids, get some fire bricks and place them on the lower (regular level grid). The second grid will go on top of the fire bricks.Born and raised in NOLA. Now live in East TN.

Ok, here we are. I decided to go indirect with some smoke. The dome temp did not get about 300, not sure why, and these pups were done in less than an hour.Born and raised in NOLA. Now live in East TN.

be sure to get fire bricks. they are less than $1 each. I am not sure of the advantage but i cook burgers direct raised all the time.Born and raised in NOLA. Now live in East TN.
